Non Veg recipes with easy method of cooking

APPETISING CHOPS





Ingredients:

¼ kg mutton chops

1 small onion

1 tsp garlic ginger paste together

1 tsp garam masala powder ground to

½ tsp. turmeric powder a paste

2 green chillies

1tsp. pepper leaves

2 tbs. coriander leaves

2 tbs Salt

2 tbs. oil

½ cup water

½ small time

Preparation: Grind onion, garlic ginger paste, garam masala powder, turmeric powder, green chillies, pepper corns and coriander leaves to a paste, put in salt and rub into raw chops. Marinate for 30 minutes.

Method:

1. Pour 2 tbs. of oil in pressure cooker.

2. Add marinated chops and ½ cup of water. Close the cooker and cook for 7 minutes.

3. Open the cooker and squeeze in the time.

4. Stir well for 1 minute and serve hot.

BABY POTATOES IN MINCE




ingredients:

250 gm Baby potatoes

500 gm Mutton mince

2 1/2 tsp. pepper powder

½ tsp. turmeric powder

2 tbs. oil

½ tsp. salt for potatoes

1 ½ tsp. salt for mince

1 tsp. garlic ginger paste

1 tsp. Soya sauce

10 mint leaves, chopped

½ lime

Method:

1. Pressure cooks the baby potatoes with ½ tsp. salt for 3 minutes. When cool, peel and keep aside.

2. Cook the mutton mince with pepper powder, turmeric powder, 1 ½ tsp salt and ¼ cup water for 3 minutes.

3. If any water remains let it evaporate.

4. Add 2 tbs. oil in a pan.

5. Add baby potatoes rubbed with ginger garlic paste and fry for a minute till light brown.

6. Add the mince and 1 tsp Soya sauce, fry till light brown.

7. Add chopped mint leaves, lime juice and stir fry till brown.

Goes well as side dish with rice

BRAIN CUTLETS




ingredients:

4 nos. lamb brain

½ tsp. salt

¼ tsp. turmeric powder

¼ cup water

1 small onion, ground to paste

1 tsp. pepper powder

1 ½ tsp. chilli powder

½ tsp. cumin powder

2 tsp. coriander leaves, chopped

1 raw egg

¼ tsp. salt

½ cup bread crumbs for coating

Oil for shallow frying


Method:

1. Boil the lamb brain with ½ tsp. salt, ¼ tsp. turmeric powder and ¼ cup water for 3 minutes.

2. Cool the lamb brains and then cut each brain in 4 pieces.

3. Rub into the brain pieces a mixture of ground onion, pepper powder, chilli powder, cumin powder and chopped coriander leaves.

4. Add ¼ tsp salt into the raw eggs and lightly beat it.

5. Dip each piece of lamb brain into the raw egg and then rub into bread crumbs.

6. Shallow fry the pieces of brain on both sides till brown.

Goes well as side dish and as a snack

CHOPS IN WHOLE SPICES




Ingredients:

¼ kg mutton chops and 4 tbs. oil

Whole spices: 1 Stick cinnamon,

2 Cardamoms,

2 Cloves.

2 medium sized onions

½ tsp. crushed cumin seeds

½ tsp. crushed aniseed

2 medium sized tomatoes, chopped

½ tsp. turmeric powder

2 tsp. crushed coriander seeds

½ cup beaten curd and 1 ½ tsp. salt


Method:

1. Put in oil in a pressure cook.

2. Add sliced onions, whole spices, crushed cumin seeds, crushed aniseed, chopped tomatoes, chilli powder, turmeric powder, crushed coriander seeds, beaten curds, raw chops and salt.

3. Close cooker, cook for 7 minutes on medium flame till meat is tender.

Serve with rice.
